Meet one of our few flops. The meal sounded delicious and was made almost entirely of peppers, cheese, and fried crunchiness, but it was a recipe for disaster. Z and I could hardly finish eating our rellenos because they were so full of oil and fat. It was all just too much. There were some fabulous flavors in there, though, and we’re thinking of trying them again but stuffing them with some grains and vegetables in addition to cheese. The recipe comes from How to Cook Everything Vegetarian, which has otherwise been full of wonderful recipes and information.
