Turkish chickpea salad and Israeli couscous with pistachios and apricots

Exciting week continues! Here’s the recipe for a Turkish salad Z made:

Turkish chickpea salad

Ingredients

  • 1 15 oz. can chickpeas, drained and rinsed
  • 2 cucumbers, diced
  • about 1/4 cup fresh parsley
  • 2 tomatoes, diced
  • garnish with mint leaves

Directions

  1. Combine.

Simple enough? It’s a pretty refreshing salad. We paired it with another thing:

Z made four of these. They were quite good, though the apricots were unexpectedly bitter. You can check out the recipe from Veganomicon here.
