I love taco salads. They’re easy to make and full of yummy things. Here’s a recipe for the taco salad I ate tonight:
- tortilla chips
- leafy green lettuce
- black beans
- tomatoes, diced
- cheddar cheese (make vegan by omitting this)
- Cook black beans and corn according to their packages.
- Break some tortilla chips on a plate and pile everything else on top.
Zach and I also like to have rice (usually brown) with our salads but didn’t make any this time.
