Pasta with broccoli, pesto & cherry tomatoes

Zach is determined to get me liking broccoli. So far he’s moved me from hating broccoli to tolerating it–but still not liking it. Luckily he chose a broccoli dish that involved pesto, which generally has a strong enough flavor to overpower the worst of the broccoli’s presence. I’m pretty sure he liked this dish a lot, and I thought it was good too (broccoli aside).

Pasta with broccoli, pesto & cherry tomatoes

  • pasta
  • broccoli, divided into florets
  • pesto
  • cherry tomatoes, halved

  1. Bring pot of water to boil and add pasta.
  2. While the pasta is cooking, mix the tomatoes and pesto together.
  3. Two minutes before the pasta is ready (look on pasta packet for times) add the broccoli to the pot.
  4. Drain the pasta and broccoli and mix well with tomatoes and pesto.

Did you make the homemade pesto with this recipe? Looks delish! Perhaps Z should give you a broccoli recipe once a week while he’s trying to improve your opinion of broccoli instead of every few days…just a thought. I am very proud of you for trying to like it! :):):)

We haven’t been eating broccoli that often. And last night we had tofu pasta since I had to eat broccoli the night before.

Today broccoli, tomorrow brussel’s sprouts. Oh the humanity.
