Zach and I made French onion soup tonight, which was exciting. That it was (supposedly) Panera’s recipe was even more exciting. Chopping four onions was less exciting. I think I have a generally good tolerance for chopping onions, meaning it doesn’t bother my eyes very much. I know I can handle more onion chopping than Z. I’m not used to cutting four onions at once, though. My eyes were a little stingy. But no crying!
Of course, Zach and I used vegetable broth instead of beef and chicken broth. And we didn’t have any Tabasco sauce, so we skipped that ingredient. Since Panera’s soup (obviously) isn’t vegetarian, I hadn’t had it for a while. I worried it wouldn’t taste as good with vegetable broth, but it was still great. Z even had two bowls, and he’s not an onion lover.
If you chop your onions in a bowl filled with water, it will keep the tear producing effects from taking hold.
